Green Chile and Goat Cheese Stuffed Burgers
INGREDIENTS
  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1 clove garlic, minced
  • 1/2 large yellow onion, chopped
  • 2-4 fresh green chilies, seeded and chopped
  • Salt and pepper
  • 1 tsp coarsely chopped tarragon
  • 1 tsp coarsely chopped parsley
  • Avocado or olive oil
  • 8 oz fresh goat cheese, pepper or herb
  • Preferred burger toppings and/or buns

Green Chile and Goat Cheese Stuffed Burgers

Perfect pairing for: Merlot

Hatch green chili season is the perfect time to try this full-flavor recipe! The chilies are paired with pungent goat cheese and stuffed into juicy burgers. When accompanied by a bottle of our Merlot, this meal is a delight to the senses.

DIRECTIONS:

-Heat a skillet over medium-high heat. Add 2 tablespoons of oil and let heat up. Sauté onions until just translucent – split ½ of the onion out and let cool in a bowl to add to the burger mixture.

-Add garlic to the onion left over in the pan and cook until fragrant. Add chilies and sauté for 2 minutes, reduce heat and let simmer, stirring occasionally until juices are rendered and chilies are just tender.

-Toss in a little salt and pepper, set aside and let cool slightly. When the mixture is cool enough fold in goat cheese to form an even mixture.

-In a bowl combine beef, pork, garlic, tarragon, parsley, salt and pepper to taste, being careful not to over mix. Add ½ of the sautéed onions once cooled.

-Form 8 very thin patties, about ½ inch or less thick. Place a rounded spoonful of cheese mixture in the center of a patty, top with a second patty and seal the edges. Grill burgers over medium-high heat for 4 minutes on each side for a medium done.
