Leek and Pecorino Pizza
INGREDIENTS
  • Premade pizza rounds, 1 large or 2 medium
  • 1/4 cup (plus 2 tablespoons) extra-virgin olive oil
  • 2 large leeks, sliced 1/4" thick
  • Salt and freshly ground pepper
  • 3/4 lb ground pork
  • 1/4 lb pecorino cheese, thinly sliced

Leek and Pecorino Pizza

Perfect pairing for: Petit Verdot

Some days, nothing but pizza will satisfy. This recipe uses a pre-made crust, so dinner can be on the table quicker than delivery! This flavor combination is a departure from the usual, pairing savory pork, zingy leeks, and nutty pecorino cheese. We love to pair this with our luscious Petit Verdot, with it’s sumptuous nose of strawberry pie and mint! Yum!

DIRECTIONS:
  1. Preheat oven to 500 degrees F.
  2. In a large skillet, heat 1/4 cup of the olive oil. Add the leeks, season with salt and pepper. Cook over moderate heat until softened, about 8 minutes, and transfer to a plate.
  3. Add the remaining 2 tablespoons of olive oil to the skillet. Add the pork, season with salt and pepper and cook until no pink remains, about 5 minutes.
  4. Place the pizza round on a baking sheet and brush with olive oil. Top with the leeks, pork, and pecorino cheese. Bake for 4 minutes, until bubbling and crisp.
A glass of our Petit Verdot will complete this mouthwatering meal. Who knew easy could be so good?
