Pineapple Salsa
INGREDIENTS
  • 2 cups fresh diced pineapple
  • 1/2 cup fresh cilantro, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1 jalapeno, seeded and finely diced
  • Zest and juice of 1 lime
  • 1 Tablespoon red wine vinegar
  • 1/8 teaspoon fine sea salt
  • 1/8 teaspoon fine black pepper
  • 3/4 teaspoon ground cumin

Perfect pairing for: Pinot Gris

Bright, tropical and delicious, this versatile salsa can go atop grilled chicken or be served with tortilla chips or any other place salsa is used… tropical chicken nachos, anyone? The acidity and fruit of the salsa merges with the flavors and mouthfeel of the Pinot Gris for a match made in heaven. Especially on a warm summer evening. A fantastic pairing and fun one for many occasions, even if the occasion is enjoying a glass of chilled Pinot Gris and wanting a healthy and delicious snack.

DIRECTIONS
  1. In a large bowl, combine all ingredients, stir well to mix.
  2. Cover and refrigerate until serving; at least 2 hours.
  3. Serve with tortilla chips or on top of grilled chicken breasts, fish or tacos.
  4. This recipe is fun to make your own. Add tomatoes, mango, different peppers or even grill the pineapple before dicing!
  5. Serve with a refreshing glass of lightly chilled Pinot Gris.
