Slow Cooker French Dip Sliders with Rosemary Au Jus

Perfect pairing for: Cabernet Sauvignon

French dip sandwiches have long been a comfort food in our family and what better way to class up an old school dish but with an insanely delicious wine pairing? Our Cabernet is perfect for red meat and au jus. And with the added twist of rosemary, the whole meal pops. The earthiness and terroir of our Columbia Gorge Cabernet pairs impeccably with the savory and meaty flavors of this dish. Throw it in the slow cooker in the morning and for lunch or dinner, the French Dip Sliders paired with Cabernet Sauvignon will feed a whole family.

DIRECTIONS
  1. Place roast in slow cooker fat side up.
  2. Combine remaining ingredients in small mixing bowl and pour over roast.
  3. Cook on high for 6 hours.
  4. Scrape off fat from meat and discard. Shred roast with forks, pulling apart, and return to slow cooker for 30 minutes.
  5. Remove roast from slow cooker and place in a large bowl. Cover to keep warm; set aside.
  6. Remove the bay leaves and strain remaining liquid to remove rosemary and peppercorns (optional). Reserve strained juice for au jus dipping sauce.
