Often dismissed as a Bordeaux blender, Cabernet Franc is a fabulous wine on its own. Beautifully balanced with a strong aromatic focus; it is a premier food wine. The notes that shine are extremely complex, ranging from tomato vine on the nose to gooseberry on the palate, hints of cocoa powder, sage and violet with touches of cherry fruit leather on the finish. The longer it is open, the more the wine changes! Cabernet Franc is a wonderfully versatile pairing wine that holds up nicely to tomato based dishes like pasta and pizza while easily balancing difficult herbal flavors like oregano, sage and rosemary.
